Stuffed Jackfruit Fry - Recipe Book

Now it's jackfruit season and let's make an easy tea time snack using stuffed jackfruits.
Ingredients:
  1. Jackfruit- 10 petals

  2. Grated coconut- 1/4 cup

  3. Rice flakes / poha / avil- 1/4 cup

  4. jaggery / sugar- 1/4 cup

  5. cashew and raisins- few

  6. ghee-1 tbsp

  7. cardamom powder- 1/4 tsp

For The Coating Batter:
  1. Rice Flour- 1/4 cup

  2. All purpose flour / maida- 1/4 cup

  3. Egg-1

  4. Salt-little

  5. Turmeric Powder- 1/4 tsp


Preparation:



  • Heat ghee in a pan; add chopped cashews and nuts.

  • Add grated jaggery (or sugar) in to it and when it melts add coconut grated and rice f;akes.

  • Cook for about 5 minutes.

  • Switch off the flame by adding cardamom powder.

  • Now the stuffing is ready and allow to cools down before stuffing.

  • Carefully remove the seed of jackfruit by making a round hole in the bottom side.

  • Through that hole add one or two tablespoons of stuffing inside.

  • Fill all the jackfruits in this way (as seen the picture).

  • Now make a very  thick batter with rice flour, maida, egg,tumeric powder and by adding little water.

  • Add the stuffed jackfruit one by one in to the thick batter and add in to the hot oil immediately.

  • Deep fry it in the hot oil until nice golden in color.

  • Drain in to paper towels and serve hot.
