Pineapple desserts have the sweet flavor along with the refreshingly
juicy texture. Nutty pineapple delight is super easy to make and great for a
feeding crowd. The crunchy bite of caramelized nuts gives an extra punch for
the creamy dessert. You can also use the tinned pineapple pieces instead of
fresh one. Everyone does try this simply delightful dessert.


Ingredients:
  1. Pineapple pieces- 1 ½ cup

  2. Sugar- 1 tbsp

  3. Thick cream- 150 ml

  4. Sweetened condensed milk- 1/4 tin (or more)

  5. Mixed nuts - ½ cup

  6. Sugar-1 tbsp (for caramelizing)

Preparation:
  • Heat a non-stick pan on high flame; when it is hot spread 1
    tbsp of sugar on it.

  • Quickly reduce the flame to low and the sugar starts
    carmelizing.

  • Add chopped nuts in to it and give a quick mix.

  • Switch off the flame and allow the nuts to cool down.

  • Crush the caramelized nuts and keep it aside.

  • Cook thinly chopped pineapple pieces with 1 tbsp of sugar
    and 1 cup of water.

  • Cook for about 5-7 minutes until pineapple pieces gets transparent and all the water gets absorbed.

  • Allow to cools down completely.

  • Blend it in to a coarse paste (having little chunks of
    pineapple to bite along with some pineapple puree).

  • In a bowl; mix thick cream with condensed milk.

  • Add the prepared pineapple mixture in to it. Mix well.

  • Add half of crushed caramelized nuts in to it.

  • Add in to serving bowls and decorate on top with remaining
    nuts crushed and fresh fruits of your choice.

  • Refrigerate for at least 4 hours to set and serve cool.
