All the dishes making in banana leaf are awesome taste and nice aroma. Kerala fish roast is a spicy and flavorful masala coated with fish. It really tastes awesome and goes well with rice and other breakfast recipes. Coconut oil gives a nice flavor to all fish recipes than using any other oil.Ingredients for marinating:Fish- 5 big pieces (any fish)Turmeric powder- ½ tspChilly powder- 1tspSalt-to tasteGinger garlic paste- 1tspLemon juice-1 tspCoconut oil-enough for shallow fryingOther ingredients:Cumin seeds- ¼ tspFenugreek seeds- ¼ tspOnion-2 nos (thinly chopped)Ginger chopped-1tbspGarlic chopped-1tbspGreen chilly-1Tomato-1 big (or 2 small)Turmeric powder- ¼ tspKashmiri chilly powder-1tspFish masala-1tspSalt-to tasteVinegar-2tbspThick Coconut milk- 1/4 cupCurry leaves- 2 springsCoriander leaves chopped-fewPreparation:Marinate the fish pieces with ingredients under marinating for 30 minutes.Shallow fry it for few minutes until both sides are just golden in color. Don’t over fry; then it becomes hard.Drain it and keep aside.In the remaining coconut oil ; splutter cumin seeds and fenugreek seeds.Add onions and sauté until transparent.Add ginger, garlic and grteen chillies.Sauté until raw smell goes off. Add all the powders (turmeric, chilly, fish masala and salt ) one by one after mixing each addition.Add tomato pieces ; sauté until mashed well.Add curry leaves and ½ cup of hot water in to ; boil for few minutes until the gravy cooks well and starts to thicken.At this time add vinegar, thick coconut milk and fried fish pieces.Carefully coat all the pieces with masala on top and cover cooks until gravy thickens.Switch off the flame; check for salt and sprinkle coriander leaves on top of it.Add these cooked fish in centre of banana leaf.
