Punjabi Kadhi Pakora - Recipe Book

Punjabi Kadhi pakora is a traditional Punjabi curry in which
the fried pakora's are dipped in delicious seasoned curd mixture.


Ingredients:


For making pakora:



  1. Onion-1 thiny chopped

  2. Besan flour- 3 tbsp

  3. Baking soda- a pinch

  4. Green chilly-2 thinly chopped

  5. Salt-to taste

  6. Turmeric powder-a pinch

  7. Chilly powder- ½ tsp

  • Mix everything in a bowl; 
    add little water (almost 3 tbsp) and mix well to a thick batter (like
    idli batter).

  • Let it rest for 15 minutes.

  • After that; take a spoon of batter and deep fried it in hot oil; in a low flame until
    golden in color.

  • Drain in to paper towels and keep aside.

For The Curry:
  1. Curd / yogurt – ½ cup

  2. Besan flour- 1 ½ tbsp

  3. Water- ½ cup

  4. Salt-to taste

  5. Turmeric powder- a pinch

  • Mix everything in a bowl well; without any lumps in it.

  • Heat it for about 10 minutes in low flame; by stirring until
    starts thickens and the raw taste of besan gets rid off .(add more water if
    desired).

  • Add fried pakora’s in to it and switch off the flame; then
    do the seasoning.

For Seasoning:
  1. Oil- 1 ½ tbsp

  2. Mustard seeds- ½ tsp

  3. Fenugreek seeds- ¼ tsp

  4. Cumin seeds- ¼ tsp

  5. Asafetida / hing – a pinch

  6. Dry red chilly- 1 large

  7. Curry leaves- 1 spring

  8. Ginger thinly sliced- 1 tsp

  9. Chilly powder- ½ tsp

  10. Coriander leaves chopped-1 tbsp

  • Heat oil; splutter fenugreek and cumin seeds; add mustard
    seeds.

  • Add dry red chilly; curry leaves and ginger chopped.

  • Saute for a minute and add chilly powder, asafoetida.

  • Quickly turn off the flame and add chopped coriander leaves.

  • Add it on top of the curry and mix well before serving.



Serve hot it with steamed rice or the choice of your roti…J
