Egg Burji - Recipe Book

Egg burji is an easy and quick recipe
for a Lazy breakfast along with a bun or bread. 
Even though it’s a kid’s delicacy; we
can make it little spicy and flavorful by adding more spices.
  This scrambled egg with onions and tomatoes
also goes well with chapathi, dosa, paratha, etc.



Ingredients:
  1. Eggs-3 large

  2. Oil-1 ½ tbsp

  3. Cumin seeds- ½ tsp

  4. Onion-2 nos medium

  5. Ginger chopped-1 tbsp

  6. Garlic chopped-1 tbsp

  7. Green chilly chopped-1 tsp

  8. Tomato-1 small

  9. Curry leaves-2 spring

  10. Turmeric powder- ½ tsp

  11. Chilly powder-1 tsp

  12. Cumin powder- ¼ tsp

  13. Garam masala powder- ¼ tsp

  14. Salt-to taste

  15. Coriander leaves chopped-1 tbsp (optional)

Preparation:
  • Heat oil in a pan; splutter cumin
    seeds.

  • Add onion sliced and saute until
    transparent.

  • Add curry leaves, ginger, garlic,
    green chilly and salt.

  • Saute for a minute until raw smell
    goes off.

  • Add tomato chopped and sauté until
    each tomato pieces are mashed well.

  • Add all the powders one by one after
    mixing well in each addition.

  • Now move all the masala in to one side
    of the pan.

  • In the other side add three eggs
    beaten with little salt and pepper powder.

  • Sauté it without mixing with the onion
    masala for a minute.

  • When the eggs are scrambled well; mix
    it with the onion masala and sauté in low flame for a minute.

  • Sprinkle coriander leaves on top and
    switch off the flame.
