Crepe Fruit Cake - Recipe Book

The layered crepes are so easy to make and wonderful to see. You can double the ingredients for a large crepe cake for a crowd ( up to 25 layers).


Ingredients:


  1. Eggs-2 no's

  2. Milk- 3/4 cup

  3. Water-1/2cup

  4. Flour-1cup

  5. Melted butter-3tbsp

  6. Vanilla extract-1tsp

  7. Butter-for coating the pan before making each crepe


For the filling pastry:


  1. Whipping powder-1sachet

  2. Milk-115ml

  3. Vanilla extract-1/4tsp

  4. Fresh fruits- strawberry, kiwi, orange and banana

  5. Sugar syrup- 1/4 cup 


Preparation:


  • Blend all the ingredients for crepe(from 1_6) in a blender to a smooth batter. 

  • Keep the batter in fridge for 2 hours

  • Heat a non-stick pan with butter

  • Pour 1/3 cup of crepe better in to the centre of the pan and swirl to spread evenly

  • Cook on medium heat for 30 seconds and flip into the other side

  • Cook for 20 second and remove the crepe into a plate

  • Make all the crepe in this way by adding little butter in the pan (almost 10 crepes).

  • In a chilled bowl blend whipping powder,vanilla extract and milk until fluffy and creamy.

  • Keep it in the fridge until the fruits are ready.

  • Cut the fruits into small pieces and carefully remove the skin of oranges

  • Dip each fruits separately in sugar syrup and drain the excess syrup  

  • Take a layer of crepe and apply a little cream over it 

  • Place oranges on top and cover it with another layer of crepe and by applying little cream in it.

  • Above that add little cream and top it with the next layer of fruit.

  • Continue the process for last layer of the crepes 

  • Lastly top it with some fresh cream or orange marmalade

  • Refrigerate for 3 hours to set.

  • Cut the crepe in to pieces and enjoy!!!
