Butter Cauliflower / Gobi Makhani

Butter cauliflower / gobi makhani is a rich, creamy and silky tomato based cauliflower gravy that goes well with any type of flat Indian breads.

Ingredients For Marinating Cauliflower:
  1. Cauliflower- 1 medium

  2. Lemon juice-1 tsp

  3. Cumin powder-1 tsp

  4. Chilly powder-1 tbsp

  5. Corn flour-2 tbsp

  6. Pepper powder-1 tsp

  7. Salt-to taste

  8. Oil-for shallow frying

  • Mix everything with little water and marinate it on cauliflower.

  • Heat a pan with little oil; and shallow fry the cauliflower on both
    sides until slightly golden in color.

  • Take out from the oil and keep aside in a plate.


Ingredients For The Butter Masala:



  1. Butter-2 tbsp

  2. Kashmiri red chilly-3 nos

  3. Onion-2 nos

  4. Cashew nut- 7 nos

  5. Tomato-2 nos

  6. Green chilly- 2 nos

  7. Turmeric powder- ½ tsp

  8. Garam masala powder- ¾ tsp

  9. Pepper powder- 1 tsp

  10. Salt-to taste

  11. Kasoori methi-1 tsp

  12. Coriander leaves chopped-1 tbsp

  13. Fresh cream-2 tbsp


Preparation:



  • Heat butter in a pan; Add kashmiri dry red chillies.

  • Add onion chopped and sauté for a minute until transparent.

  • Add cashew nuts in to it and sauté for another one minute.

  • Add turmeric powder, garam masala powder and salt.

  • Add tomato chopped and sauté for another few minutes until tomato
    pieces are mashed.

  • Switch off the flame and after cools down make a fine puree out of
    it by putting it on a blender.

  • Boil ¼ cup of water in the same pan and add the
    blended puree in to it.

  • Mix well and slow cook for about 5-6 minutes.

  • Add fried cauliflower pieces in to it and mix well.

  • Add kasoori methi (by crushing with hands) and coriander leaves.

  • Add fresh cream in to it and switch off the flame quickly.

  • Add in to serving bowl and garnish on top with a piece of butter.

  • Serve hot with the choice of your Roti.
