Brinji / Coconut Milk Rice

Birinji is lovely flavored rice with bay leaf and coconut. The
aroma of bay leaves and coconut are really nice. Any type of beef curry is a
perfect combination with this rice; however all the other curries also go well with brinji rice..


Ingredients:
  1. Basmati Rice- 1 cup

  2. Cumin seeds- ¼ tsp

  3. Pepper corns-1 tsp

  4. Bay leaf- 2 nos

  5. Curry leaves-1 spring

  6. Shallots / small onion thinly chopped-2 tbsp

  7. Coconut milk- 1 ¾ cup

  8. Salt-to taste

  9. Oil- 1 1/2  tbsp

Ingredients for grinding:
  1. Coconut grated- ¼ cup

  2. Cumin seeds- ¼ tsp

  3. Green chilly-1  nos

  • Grind all the ingredients in a blender to a smooth thick paste
    by adding little water.


Preparation:



  • Soak basmati rice in water for 30 minutes.

  • Drain it and keep aside.

  • Heat oil in a pan (non-stick pan is preferable) add shallots
    and saute until nice golden brown in color.

  • Add bay leaves, pepper corns, cumin seeds and curry leaves.

  • Add coconut milk and salt in to it.

  • When it starts boiling add the grinned coconut paste and
    drained basmati rice.

  • Mix well and cover cooks it for few minutes (about 10-15 minutes)
    until all the water gets absorbed and the gets cooked nicely. (Stir occasionally
    about 2-3 times gently without breaking the rice).

  • Open the lid after 10 minutes and give a gentle mix.

  • Serve hot with the choice your  curry.
